Recipe #8 - Fish Pie

Sunday has come around once again so I will cook one of my favourite comfort foods: Fish Pie. This is a very versatile dish as you can pretty much use any fish you fancy. It is a great meal when you have company during the cold winter months as it is easy to make. It requires a few ingredients but once you start cooking it becomes very simple. I like to cook the mash and sauce simultaneously but you can do them separately if you don't want to have that pressure. So firstly mash the potatoes. Try to use Desirée potatoes as they have the perfect consistency when you mash them; I actually prefer to keep the skin on the potatoes as it is very nutritious and adds an extra texture to the dish. However, you may peel the potatoes if you prefer that. Chop the potatoes into chunks and add to boiling salted water until they are tender. Drain the water and add the butter and milk to the potatoes. Use a potato masher to make it smooth, once it starts to resemble mashed potatoes, add the egg yolks and season to taste.

For the sauce you can start by sweating the onion with oil and butter. After 5 minutes, add white wine and cook until it has reduced. At this point add the flour and slowly add the stock; cook this for an additional 5 minutes. Once the stock has reduced then add the milk and season. To finish add the cream and parsley. Grab yourself a serving tray and rub butter to make sure nothing sticks. Add the fish (chopped in chunks) and prawns. Stir in the lovely sauce and mix in well with some lemon juice. Finish off by adding the mash on top and making sure to use your fork to fluff the top. Grate some cheddar cheese and put it in the oven at 200C for 20 minutes. This fish pie goes great with a green salad! Enjoy!

Recipe

Mashed Potatoes

750g Potatoes
75g Butter
50ml Milk
2 Egg Yolks
Grated Cheddar Cheese
Salt and Pepper

Sauce

1 Onion
40g Butter
Drizzle of Olive Oil
Handful of Thyme
Handful of Parsley
50ml of White Wine
250ml of Fish Stock (Chicken is also fine)
200ml of Milk
4 tbsp of Flour
4 tbsp of Double Cream
Salt and Pepper 

Fish (Your Choice)

200g Salmon
200g Cod
150g Prawns
1 Lemon

1) Start with the mashed potatoes; cut the potatoes into chunks and boil them in salted water until tender. Drain and mash with the butter and milk. Finally mash alongside the egg yolks and season to taste.
2) For the sauce cook the onion with oil and butter for 5 minutes. Then add the white wine and cook until it has reduced. Mix in the flour and add the stock; remember to keep stirring with a wooden spoon. Once the stock has reduced by a third, add the milk. Cook this for an additional 5 minutes. Finish the sauce by adding the cream and parsley alongside seasoning.
3) Grease a serving tray and add chunks of the salmon and cod. Then add the prawns with the juice from 1 lemon. Slowly add the sauce and mix in well. Top the fish with the mashed potatoes and pass your fork through the top. To finish, add grated cheddar cheese and put in the oven for 20 minutes at 200C. Enjoy!
