Recipe #10 - Pasta with Basil Pesto

It has been a while but I finally have enough time to write a few posts. You can expect more over the coming days. Today I will post a very simple recipe that most will be able to make. In order to make the pesto I am utilising a pestle and mortar. You can use a food processor but from experience, you get a better texture if you do it by hand. It is a refreshing meal that can be made very quickly and tastes good. You can use any type of pasta although I prefer those that have grooves so the pesto can attach to them. Firstly you make the pesto. Add a clove of garlic, salt and pine nuts to the pestle and mortar; grind them well. Once it becomes crumbly, add the spinach and basil to the mixture and break down the fibres. In order to help with the mixing, introduce the olive oil once the tough fibres have been broken and grind well. For the richness, add the parmesan cheese and finish grinding. Add more if you wish. To cut the richness just add a squeeze of lemon to finish. Cook the pasta in boiling water with salt and olive oil. In a saucepan, start frying the tomatoes and runner beans until they soften. Once this is done, mix together all the ingredients and top with some more parmesan cheese. Enjoy!


Recipe

1 Clove of Garlic
15g Pine Nuts
40g Basil
10g Spinach
50g Parmesan Cheese
1 Lemon
80ml Olive Oil
100g Pasta
30g Vine Tomatoes
30g Runner Beans
Salt and Pepper

1) Make the basil pesto by grinding the garlic, pine nuts and salt. Once this has been processed, add the basil and spinach with olive oil and continue grinding. Finish by mixing the parmesan cheese and a squeeze of lemon.
2) In a separate pan, cook any type of pasta in boiling water with salt and olive oil. Once cooked place to one side.
3) Fry the tomatoes and runner beans lightly with olive oil, once they have softened add all the ingredients together. You can serve with additional parmesan cheese and eat hot or cold. Enjoy!
