Recipe #7 - Beetroot Hummus

Sometimes you need to eat something fast and healthy. A good choice is hummus. However, it can get a bit repetitive so it's good to add a twist once in a while. Hummus, originally from the middle east, can be served with either pita bread or any vegetable that can be dipped. It is very popular in Western countries and is a healthy spread compared to other products available in the market. Beetroots are also a super healthy vegetable with many different and exciting properties. Beetroot Hummus makes the ideal snack and is easy to make. Simply having a blender and a pestle and mortar is enough for this recipe. Blend the chickpeas and beetroots until you achieve the desired consistency. Then grind toasted cumin seeds with salt and add to the blender alongside the tahini. Finish by adding the juice of one lemon. To make the Beetroot Hummus extra special you can sprinkle sesame seeds, cumin seeds and sumac on top. Enjoy!

Recipe

250g Chickpeas
250g Beetroot
1 tbsp Olive Oil
Pinch of Cumin Seeds
Pinch of Salt
1 tbsp of Tahini
1 Lemon
Pinch of Sumac
Pinch of Sesame Seeds

1) Blend the beetroots and chickpeas and olive oil;
2) Grind the cumin seeds and salt in a pestle and mortar and add to the blender. Additionally, add a tablespoon of tahini;
3) Add the juice of one lemon to the blender and mix;
4) To finish sprinkle with cumin seeds, sesame seeds and sumac.
